Egg Hunt

Easter is less than two weeks away. For those of you eating vegetable soup and bread without butter, you might as well stop reading, because these will definitely ruin your Lenten diet. The rest of us, who continue to have a midnight snack of cookies, and chow down super burritos at lunch, these muffins are a perfect April breakfast.

You can't walk into any grocery store without seeing those oval tin-wrapped chocolate gooey-filled Cadbury eggs. Here's the recipe to hide them inside vanilla muffins, kind of like an Easter egg hunt.

Mix together 2 cups flour, 2 teaspoons baking powder, 1/2 teaspoon salt


In separate smaller bowl, mix together 3/4 cup sugar, 2 eggs, 1/3 cup melted butter, 1 teaspoon vanilla extract. When smooth, stir in 1/2 cup milk. I used Bolthouse's Vanilla Chai Perfectly Protein instead, and it tasted great.


Combine dry and wet mixtures until smooth


Place muffin papers into muffin pan holes and pour mixture into each paper evenly. For larger muffins, I only used 10 papers, filling them 85% full

Now for the eggs. Unwrap 10 miniature Cadbury eggs. If you buy the 12 pack, unwrap them all, and enjoy the two left over.


Push one egg into the middle of each muffin mixture. Use a spoon to spread a layer of muffin mix over the top of the egg


Bake for 15 minutes at 350 degrees. While waiting, check out the Bolthouse website. Their beverages are sooo good. Some extensive, but good looking recipes on the site as well.

When the muffins are done baking, let them cool for 1/2 hour, then remove from tray. Continue to let cool for another 1/2 hour. Then, let the hunting begin!


Instead of trampled down grass, you'll be left with some paper a few crumbs
